This is shaping up to be a week of wordless posts. Anything but normal for me to be short on verbiage. I'm excited about all of the projects blooming this summer and can't wait to bring everyone up to speed. For now, pour a glass of Pino Grigio and bake up some of these delectable mushrooms for a Sunday evening treat with a recent episode of Mad Men.
Stuffed Mushrooms
24 medium mushrooms, wiped clean with a dry paper towel
4 Tbs. butter, melted
1/4 cup onion, finely chopped
2 Tbs. dry white wine
1/4 cup dry bread crumbs
1/4 cup bacon, cooked crisp, drained and chopped
1 Tbs. parsley
2 cloves garlic, minced
1/2 tsp. oregano
1/2 cup moneterey jack cheese (I only had colby/jack on hand when I photographed this post, but they really are better with straight jack only)
Remove stems from mushrooms, chop enough stems to measure 1/4 cup. Set aside. Place mushroom caps on a lightly buttered baking sheet.
In a medium skillet, saute the mushroom stems, diced onion and minced garlic in a light drizzle of olive oil. Add melted butter and wine. Stir in remaining dry ingredients and mix well. Fill mushroom caps with mixture and sprinkle with cheese. Bake for 20 minutes at 350 degrees. Enjoy!
